Simple Laksa
I never thought I would be able to make laksa at home, but this one is so easy, tasty and authentic and uses only ingredients you are more than likely to have in your pantry.
Ingredients:

2 Teaspoons Coconut Oil

1/2 Cup Shallots (chopped)

6 Brazil Nuts (chopped)

Finely grated rind of one Lemon

1 Teaspoon Turmeric

1 Teaspoon Chopped Chilli
-
1 Teaspoon Chopped Ginger

A small selection of your favourite fresh veg- carrot, zucchini, beans, brocolli, capsicum

Juice of one Lemon

1 Can Organic Coconut Milk

2 Cup Organic Vegetable Stock

1 packet of Vermicelli Noodles

500g White Fish (I use Ling)

1/2 Cup Coriander (chopped)
Method:

Heat coconut oil in a large heavy-based saucepan.

Add shallots, brazil nuts, lemon rind, turmeric, chilli and ginger and simmer for 5 minutes, stirring (don't let it burn).

Add lemon juice, coconut milk, stock and bring to the boil.

Add noodles, fish and veggies and reduce to medium heat for 3-5 minutes.

Stir in coriander and serve with fresh coriander on the top.
