Love Soup (Beetroot and Cauliflower)

Nutritiously Rich LOVE Soup, for you and your lover.

Ingredients:

  • 1 Cauliflower
  • 3 Beetroots (medium)
  • 1 Leek
  • 2 Garlic cloves
  • 3 Cups Organic Vegetable Stock
  • 1 Dollop Organic Sheeps Yoghurt
  • 1 Teaspoon Olive Oil
  • Pepper

Method:

  1. In a heavy based soup pan, fry off finely sliced leek and crushed garlic in 1 tsp of olive oil.
  2. Add beetroot (chopped into quarters) and cauliflower florets. Toss them around for a minute or two in the leek mix.
  3. Add stock and cover, allow to come to the boil then lower to a simmer.
  4. After 30 minutes of simmer, remove the lid and check to see if beetroot is soft. Continue to cook until beets are soft.
  5. Using a stick-mix or blender, blend until smooth.
  6. Serve with a dollop of sheeps yoghurt and some rye bread.
