Zucchini Fritters

A very quick and absolutely delicious dish for breakfast, lunch, dinner or a snack.

Ingredients:

  • 1 Cup Grated Zucchini
  • 2 Eggs
  • 3 Shallots
  • 1 Tablespoon Coconut Flour / Almond Meal (optional)
  • 1/2 Teaspoon Cumin
  • Sea Salt and Pepper

Method:

  1. Once zucchini is grated, put it in a strainer or collander and squeeze out excess water (you can squeeze it with your hands).
  2. Leave for ten minutes, then squeeze again! If the zucchini is too 'wet', the fritters will not stick together very well.
  3. Add eggs, finely sliced shallots, cumin, salt and pepper (and coconut/almond flour if desired).
  4. Mix through.
  5. Place spoonfulls of the mixture into a large non-stick pan (perhaps using a litle coconut oil to coat the pan).
  6. Cook until golden brown on one side and then flip over. Total cooking time is around 4 minutes (2 minutes each side).

Serving Suggestion: Serve with soy mayonnaise with cayenne pepper stirred through for some extra bite, baked beetroot quarters and lightly steamed brocolli and beans for a well-balanced meal.
