Choc Passionfruit Cupcakes (Gluten-Free, Dairy-Free, Sugar-Free)

Sugar-free, Gluten-free, Dairy-free DELICIOUSNESS!

Ingredients:

  • 1/4 cup coconut flour
  • 1/4 cup cacao
  • good pinch of sea salt
  • 1/4 teaspoon baking powder
  • 2 small very ripe passionfruits (seeds and liquid)
  • 4 eggs
  • 1/4 cup virgin coconut oil
  • 1/3 cup raw honey

Method:

SO EASY:

  1. Place dry ingredients in a bowl and mix together.
  2. Add wet ingredients all together and whisk until fully mixed through. It is a good idea to make sure the coconut oil is in its liquid state so you can warm it slightly if it's a cold day and it has solidified!
  3. Spoon into cupcake cases and bake for 15 minutes on 180 degrees.
  4. Allow to cool and top with more passionfruit if you wish.

Tip: You can find coconut flour at most large good quality health food stores.
