Sweet Potato, Spring Onion and Fetta Tart

Meat pies? What about vegetable tarts! Delicious

Ingredients

  • 3 layers of wholemeal pastry (you can make your own with quinoa flour or if you dont have time, buy the frozen sheets)
  • 1 sweet potato
  • 3 spring onions
  • 1 small red onion
  • 4 cloves of garlic
  • 1 small block of Danish fetta
  • 1 tsp olive oil
  • salt and pepper

Method

  1. Preheat oven to 180 degrees.
  2. Peel and chop sweet potato into small cubes, place into baking tray with 4 crushed cloves of garlic (just crush them whole with the back of a knife and throw them in) and bake until crispy.
  3. Saute finely sliced spring onion and red onion in a pan until soft.
  4. In a bowl, combine sweet potato cubes and garlic, onion mix and crumbled Danish fetta. 
  5. Season with salt and pepper until it tastes good. 
  6. Using a greaseproof muffin tin, fill each muffin hole with pastry, with a little overflowing on the edge to make a 'lip' or rim.
  7. Fill each cup with filling and bake until pastry is golden brown (around 20 minutes).

Serve with a vegetable and chicpea salad for a balanced meal.
